Lucky Baileys Irish Cream Cookies

Baileys Irish Cream Cookies for St. Patrick's Day or ANY DAY you need a little EXTRA LUCK.

INGREDIENTS:

2 cups granulated sugar
1 cup butter, room temperature
3 eggs, well beaten
1/2 cup sour cream
Pinch of salt
1 tsp baking soda
½ cup Baileys Irish Cream
3 ½ cups flour
* White icing and Green sugar sprinkles (optional)

PREPARATION:

Cream together sugar and butter, mix eggs and beat well until light and fluffy. Stir baking soda into the sour cream and add this, along with the eggs, to the creamed butter mixture and then last but not least add the Baileys.

Drop teaspoons of batter onto a greased cookie sheet and sprinkle with colored sugar. Bake in a 350°F preheated oven 10 to 12 minutes or until done. Serve to your drunk Irish friends… goes great with Irish coffees.
