Luscious Low-Carb Crispy Parmesan Chicken Tenders

These delightful chicken tenders are the perfect combination of flavor and health-conscious indulgence. Each bite boasts a golden, crispy exterior that encases tender chicken, all coated in a savory Parmesan cheese crust.

INGREDIENTS: 

6 chicken breasts cut in to strips
¼ cup whipping cream
½ teaspoon Cayenne Pepper
1 teaspoon minced fresh parsley
2 eggs
½ cup Carbquik
 (A low carb Bisquick)
½ cup Parmesan Cheese
½ cup butter
½ cup olive oil
Serve with
Low Carb Ranch Dressing or Low Carb Honey Mustard

PREPARATION:

In a bowl, whisk together cream and egg.  In another bowl, mix together Carbquick, Cayenne, Parsley and Parmesan cheese.  Melt butter and oil in a medium skillet, on medium heat.

Dip chicken breast strip in egg mixture, then in dry coating mixture. Place in hot melted butter in skillet.  Turn after bottom side is golden brown.  Cook second side until its golden brown.  This is even easier if you have a home deep fat fryer.
