Let's settle something once and for all...Spam has taken a lot of abuse over the years. Somewhere along the way, this little blue can became the punchline of breakfast. Well, the Ministry of Breakfast has officially reopened the case, and after one sizzling cast-iron experiment with Hickory Spam, the verdict is in...Not guilty. Delicious.

I found Hickory Spam at one of my favorite Asian markets here on the San Francisco Peninsula. Curious won out over skepticism, and I'm so glad it did. Golden brown, smoky, crispy around the edges, folded into soft scrambled eggs with sharp cheddar and fresh scallions... this simple breakfast completely changed my mind. It's hearty, protein-packed, budget-friendly, and perfect for anyone building a well-stocked pantry.

🥚 The Ministry's Official Recipe🥓

Ingredients

  • 1 can Hickory Spam

  • 4 large eggs

  • 1 tablespoon butter

  • 2 tablespoons heavy cream or milk (optional)

  • Salt and freshly ground black pepper

  • ½ cup shredded sharp cheddar cheese

  • 2 scallions, thinly sliced

  • Thick slices of sourdough bread

  • Good creamery butter for serving

Instructions

  1. Slice the Hickory Spam into bite-sized cubes or thick strips.

  2. Heat a cast-iron skillet over medium heat and add the butter.

  3. Cook the Spam until every side is beautifully golden brown and lightly crisp.

  4. Transfer the Spam to a paper towel-lined plate while leaving just a little of the flavorful drippings in the pan.

  5. Whisk the eggs with the cream, salt, and pepper.

  6. Reduce the heat to low and gently scramble the eggs until they're soft and creamy.

  7. Fold the browned Spam back into the eggs.

  8. Sprinkle generously with sharp cheddar and sliced scallions.

  9. Serve immediately with buttered sourdough toast and a hot cup of coffee.
