There are certain questions that have divided humanity for generations.
🎸 Beatles or Stones?
☕ Coffee or tea?
🐶 Dogs or cats?
And perhaps the most consequential question of all:
🍫 FUDGY, CHEWY OR CAKEY BROWNIES?
This deserves serious investigation.
Fortunately, here at The Nomad Kitchen, we are willing to make the necessary sacrifices for science.
We will bake the brownies.
We will eat the brownies.
We will change the variables.
And then, in the interest of scientific integrity, we will eat more brownies.
Someone has to do it.
🔬 FIRST: WHAT EXACTLY IS A BROWNIE?
A brownie occupies that glorious little territory somewhere between:
🍰 Cake
🍪 Cookie
🍫 Fudge
🍬 Chocolate candy
That's precisely why tiny changes in a brownie recipe can produce dramatically different results.
Almost every brownie starts with the same basic building blocks:
CHOCOLATE + FAT + SUGAR + EGGS + FLOUR
But change the proportions—or how they're mixed—and suddenly you've created an entirely different brownie.
🧪 THE BIG BROWNIE VARIABLES
🧈 Fat — Butter, oil and chocolate affect richness, tenderness and texture.
🌾 Flour — Provides structure. Generally, more flour moves you toward cake; less flour moves you toward fudge.
🥚 Eggs — Add richness, structure and emulsification.
🍚 Sugar — Provides sweetness, moisture retention, chew and that wonderful top crust.
🍫 Chocolate & Cocoa — Bring flavor, cocoa solids and, depending on the chocolate, additional fat.
🥄 Mixing — Determines how much air and gluten development enter the equation.
🔥 Baking Time — Perhaps the easiest way to turn a magnificent brownie into a chocolate roofing tile.

THE THREE GREAT
BROWNIE FAMILIES
1. 🤎 THE FUDGY BROWNIE
Dense. Dark. Rich. Almost truffle-like.
A truly fudgy brownie barely remembers that cake exists.
🔬 The Science
Fudgy brownies generally have a high proportion of fat and chocolate compared with flour.
Less flour means less structural framework.
That leaves us with something dense, moist and almost candy-like instead of fluffy.
Melted chocolate can make this style particularly luxurious because chocolate contributes both cocoa solids and cocoa butter.
🧪 Move Your Brownie Toward Fudgy
Starting with our Master Brownie:
➖ Reduce the flour slightly
➕ Increase the chocolate
🍫 Consider adding melted bittersweet or semisweet chocolate
🥄 Don't aggressively whip air into the batter
⏰ And for heaven's sake, don't overbake it
THE FUDGY FORMULA:
More chocolate + high fat-to-flour ratio + less flour + less air = FUDGY
2. 🏆 THE CHEWY BROWNIE
This is where The Nomad Kitchen plants its flag.
A great chewy brownie gives you the richness of a fudgy brownie but enough structure to pick it up, bite into it and get that wonderful little resistance before everything dissolves into chocolate happiness.
🔬 The Science
For our chewy brownie, we use both butter AND neutral oil.
Why both?
Because they have different jobs.
🧈 BUTTER = FLAVOR
Butter brings wonderful dairy richness and its milk solids contribute additional flavor during baking.
💧 OIL = TENDERNESS + SOFTNESS
Oil remains liquid at room temperature and behaves differently from butter when chilled.
That helps our brownie remain pleasantly soft and chewy instead of becoming hard.
And this becomes particularly useful if you're making...
🍨 BROWNIE ICE CREAM SANDWICHES.
Which, purely coincidentally, we are.
A brownie destined for the freezer needs enough structure to hold the ice cream but enough tenderness that biting into it doesn't require emergency dental work.
Butter + oil gives us the beautiful middle ground.
3. 🍰 THE CAKEY BROWNIE
Yes.
Cakey brownie people exist.
We love them too.
We don't necessarily understand them.
But we love them.
🔬 The Science
Cakey brownies move the formula closer to actual chocolate cake.
They generally contain:
🌾 More flour
🥚 More structural support from eggs
🧪 Sometimes chemical leavening such as baking powder
💨 More incorporated air
🧈 A lower relative proportion of fat to flour
Flour provides starch and gluten-forming proteins.
Egg proteins set during baking.
Add incorporated air—and perhaps a little chemical leavening—and suddenly our dense brownie begins lifting.
The result becomes lighter, softer and more cake-like.
THE CAKEY FORMULA:
More flour + more structure + more air + optional leavening = CAKEY

👑MASTER BROWNIE👑
After playing with the ratios, we've chosen our house brownie.
🍫 Deeply chocolate.
🤎 Chewy around the edges.
✨ Moist and rich in the middle.
😈 And substantial enough to eat straight from your hand—or turn into something completely ridiculous.
Which is generally where we come in.
🛒 INGREDIENTS
THE NOMAD KITCHEN MASTER BROWNIE
🧈 1/2 cup (1 stick) unsalted butter, melted
💧 1/2 cup neutral oil
🍚 1 3/4 cups granulated sugar
🥚 3 large eggs
🌼 2 teaspoons pure vanilla extract
🍫 1 cup unsweetened cocoa powder
🌾 1 cup all-purpose flour
🧂 1/2 teaspoon kosher salt
☕ 1/2 teaspoon espresso powder
🍫 3/4 cup semisweet chocolate chips
👩🍳 LET'S MAKE BROWNIES
1. 🔥 PREHEAT & PREP
Preheat the oven to 350°F.
Line a 9 × 13-inch baking pan with parchment paper, leaving enough overhang to lift the brownies from the pan after cooling.
2. 🧈 BUILD THE FAT & SUGAR BASE
Melt the butter and allow it to cool slightly.
Whisk together:
Melted butter + oil + sugar
Give this step some attention.
You want everything thoroughly incorporated before introducing the eggs.
3. 🥚 ADD THE EGGS & VANILLA
Add the eggs and vanilla.
Whisk until the mixture becomes smooth and glossy.
You don't need to whip enormous amounts of air into it—we're making brownies, not a soufflé.
But properly combining the eggs, sugar and fat helps build that beautiful brownie texture.
4. 🍫 ADD THE DRY INGREDIENTS
Add:
Cocoa powder + flour + salt + espresso powder
Fold gently until just combined.
Once flour enters the party, don't beat the living daylights out of it.
Too much mixing encourages gluten development.
And excessive gluten can turn our beautiful tender brownie toward tough.
Nobody invited Tough Brownie.
5. 🍫 ADD THE CHOCOLATE CHIPS
Fold in 3/4 cup semisweet chocolate chips.
We particularly love semisweet here because they create little molten pockets of chocolate without making the entire brownie overwhelmingly sweet.
6. ⏰ BAKE
Spread the batter evenly into your prepared pan.
Bake at:
350°F for approximately 20–25 minutes
Begin checking early.
A toothpick inserted near the center should emerge with moist crumbs rather than completely clean.
Remember:
⚠️ BROWNIES CONTINUE SETTING AS THEY COOL.
A completely clean toothpick may mean you've taken them farther than necessary.
7. 🧊 COOL
And now we arrive at perhaps the most difficult step in brownie making:
LEAVE THEM ALONE.
Let the brownies cool completely before cutting.
Warm brownies are delicious.
Warm brownies are also structurally lawless.
☕ WHY WE PUT ESPRESSO IN OUR BROWNIES
This became one of our favorite discoveries.
The espresso isn't really there to make the brownies taste like coffee.
A small amount of espresso powder helps intensify the roasted, bittersweet flavors already living inside chocolate.
It's supporting cast—not leading lady.
We found that 1/2 teaspoon gives us that deeper chocolate personality without suddenly announcing:
☕ HELLO. I AM A MOCHA.
If you adore coffee and chocolate together, however, increase it.
This is your brownie.
🍫 WHY SEMISWEET CHOCOLATE CHIPS?
We tested them.
We're keeping them.
Milk chocolate can become very sweet against an already sweet brownie batter.
Bittersweet chocolate is wonderful if you prefer a darker, more sophisticated chocolate flavor.
But semisweet lands beautifully in the middle.
And those little molten chocolate pockets give us another texture inside the brownie.
That matters.
🤔 TO FROST OR NOT TO FROST?
That is the question.
Our answer?
IT DEPENDS WHAT YOU'RE DOING WITH THE BROWNIE.
Eating one straight from the pan?
Naked.
It doesn't need a damn thing.
Making brownie ice cream sandwiches?
No frosting.
Between brownie, ice cream, peanut butter, berries and whatever other nonsense we've gotten ourselves into, you've already got plenty happening.
Serving one beautiful brownie for dessert?
Well...
Now you've got our attention.
🍫 Bring on the ganache.
A thin pour of glossy dark chocolate ganache can transform a humble square of brownie into a gorgeous plated dessert.
Add:
🍓 A few fresh berries
☁️ A little softly whipped cream
🍨 Maybe a tiny scoop of vanilla ice cream
And suddenly Tuesday night thinks it's Saturday.
