One of my favorite hidden gems here in Pacifica is the fresh meat counter at Oceana Market, where they make their own fresh chorizo right in the store. It's beautifully seasoned, incredibly flavorful, and honestly one of the best chorizos I've ever tasted.
I paired that amazing chorizo with lean ground chicken, sweet peppers, onions, garlic, and plenty of sharp cheddar cheese to create something that's a little different than a traditional chimichanga.
There are no beans. No rice. Just lots of beautiful protein, fresh vegetables, and melted cheddar wrapped inside a crispy flour tortilla.
After a quick fry until golden brown, they're served with ripe avocado, fresh salsa, and cool sour cream.
They're elegant enough for lunch with friends, hearty enough for dinner, and, sliced into little rounds, they make irresistible party appetizers.

🛒 Ingredients
🌮 Filling
1 pound ground chicken
1 pound fresh chorizo
1 large onion, thinly sliced
1 red mini sweet pepper, diced
1 orange mini sweet pepper, diced
1 yellow mini sweet pepper, diced
3 cloves garlic, minced
4 scallions, finely chopped
2 tablespoons butter
Splash of olive oil
¼ cup apple cider vinegar (or rice wine vinegar)
2 tablespoons brown sugar
Salt and freshly cracked black pepper
Pinch of red pepper flakes (optional)
2 cups sharp cheddar cheese, shredded

6–8 medium flour tortillas
