Very Berry Strawberry Monte Cristo Sandwich
Ingredients
For the Custard
4 large eggs
½ cup half-and-half
1 tablespoon vanilla extract
¼ teaspoon fine sea salt
¼ teaspoon brown sugar
Juice of 1 lemon
For the Sandwiches
8 slices brioche bread
4 tablespoons butter, divided
8 slices Gruyère cheese
½ cup strawberry preserves
1 cup fresh strawberries, thinly sliced
For Garnish
Powdered sugar
Fresh strawberries
Fresh raspberries
Fresh blackberries

Directions
In a large bowl, whisk together the eggs, half-and-half, vanilla, salt, brown sugar, and lemon juice.
Place the brioche slices into the custard mixture and gently turn several times until the bread absorbs most of the liquid. Allow the bread to become fully saturated without falling apart.
Heat a large skillet over medium heat and melt 2 tablespoons of butter.
Place the soaked brioche slices into the skillet and cook until golden brown. Flip frequently to ensure even cooking and a rich golden crust on both sides.
Spread strawberry preserves on one side of the bread.
Top with Gruyère cheese and sliced strawberries.
Close the sandwiches and continue cooking briefly until the cheese melts and becomes warm and creamy.
Transfer to serving plates.
Dust generously with powdered sugar.
