I originally made this for a California BLT, but before long I was spreading it on grilled chicken, burgers, toasted sourdough, roasted vegetables, and practically anything that sat still long enough.

Easy Roasted Garlic Lemon Aioli
Yield
Approximately 1¼ cups
Ingredients
1 whole head garlic
½ cup olive oil (for roasting)
1 cup mayonnaise
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 tablespoon olive oil
½ teaspoon sea salt
Fresh cracked black pepper to taste
Directions
Roast the Garlic
Preheat oven to 375°F.
Slice the top off the garlic head, leaving the cloves attached.
Place in a small baking dish.
Pour olive oil over the garlic.
Roast for 40–45 minutes until golden and soft.
Allow to cool.
Make the Aioli
Squeeze the roasted garlic cloves into a mixing bowl.
Mash into a smooth paste.
Add mayonnaise, lemon juice, lemon zest, olive oil, salt, and pepper.
Whisk until silky and smooth.
Taste and adjust seasoning as desired.
Storage
Transfer to a clean mason jar or airtight container.
