This warm little apple rose is somewhere between an apple tart, an apple pie, and a French pastry—but tucked inside all those delicate apple petals is a little surprise: creamy goat cheese.

That tiny bit of tangy cheese balances the brown sugar, cinnamon and butter beautifully. The puff pastry gets crisp and golden underneath while the apple slices soften into gorgeous little rose petals.

It is sweet without being too sweet.

Salty.

Buttery.

Creamy.

Crunchy.

And served warm from the oven?

Good grief.

🌹 This is one of my favorite little kitchen experiments yet.

🌹 French Apple Rose with Goat Cheese

Makes

1 large apple rose

You can easily multiply the recipe to make several smaller roses for brunch, dessert or a Fairy Tea at Three.

🍎 Ingredients

  • 1 sheet frozen puff pastry, thawed
    (I used Pepperidge Farm)

  • 1 Red Delicious apple

  • Juice of 1 lemon

  • Water, enough to cover the sliced apples

  • About 1 tablespoon softened butter, plus a little extra for the baking dish

  • 1 to 2 tablespoons brown sugar, to taste

  • Cinnamon, to taste

  • Small pinch flaky salt

  • About 1 to 2 tablespoons plain goat cheese, softened

🍋 Step 1: Slice the Apple

Leave the beautiful red skin on the apple.

Trim just a little from the top and bottom.

Using a mandoline, slice the apple into very thin rounds.

You want the slices thin enough to bend easily but thick enough that you can still see those gorgeous red edges.

The apple skin becomes the edge of your rose petals.

🌹 That is where the magic happens.

🍎 Step 2: Soften the Apple Slices

Fill a microwave-safe bowl with water and add the juice of one lemon.

Add the apple slices.

Microwave for approximately:

3 minutes

The goal isn't to cook the apples completely.

You simply want them flexible enough to roll without cracking.

Drain them well and let them cool enough to handle.

🧈 Step 3: Prepare the Puff Pastry

Preheat the oven to:

375°F

Cut a long, narrow strip from the thawed sheet of puff pastry.

Gently flatten or roll the pastry strip slightly so that it becomes a little longer and thinner.

Spread the pastry lightly with:

  • Softened butter

  • Brown sugar

  • Cinnamon

  • A tiny pinch of flaky salt

You don't need a thick layer.

Just enough to create that beautiful buttery cinnamon-sugar center.

🧀 Step 4: Add the Goat Cheese

Now for the little secret that makes this version special.

Place a small ribbon of plain goat cheese along the center-lower portion of the pastry.

Don't overload it.

You want a gentle creamy layer—not a cheese explosion.

Sprinkle the goat cheese with just a touch more:

brown sugar + cinnamon

The tangy cheese with the apples and brown sugar is absolutely gorgeous.

🌹 Step 5: Make the Apple Rose

Arrange the softened apple slices along the upper half of the pastry strip.

Overlap each slice slightly.

Let the curved red edges of the apple extend just above the pastry.

Think:

🌹 rose petals

🌹 rose petals

🌹 more rose petals

Fold the bottom portion of the puff pastry gently upward over the lower half of the apples.

Then begin rolling from one end.

Roll gently but firmly until you have created a beautiful little apple rose.

🧈 Step 6: Bake

Lightly butter the bottom of a small baking dish, ramekin or muffin cup.

Place the apple rose upright inside.

Bake at:

375°F for approximately 35–40 minutes

You want:

  • Tender apple petals

  • Deep golden puff pastry

  • A crisp, toasted bottom

  • Melted cinnamon-brown-sugar butter

  • Warm creamy goat cheese hiding inside

If the apple edges begin browning too quickly, loosely cover the top with a little foil while the pastry finishes baking.

✨ Serve It Warm

Let the rose rest for just a few minutes after baking.

Then eat it while it is still warm and beautifully crisp.

And truly?

It doesn't need anything else.

No sauce.

No ice cream.

No whipped cream.

The goat cheese provides all the creamy richness you need.

You get the flaky pastry, tender apple, melted butter, cinnamon, caramel-like brown sugar, little pops of salt and that beautiful tangy cheese.

It tastes like a tiny apple pie decided to spend a semester in Paris.

🧚 Fairy Tea at Three Variation

For an afternoon tea, brunch platter or party dessert, make the roses smaller.

Cut the puff pastry into narrower strips and use fewer apple slices in each rose.

Bake the miniature roses in a muffin tin.

They would be gorgeous served on a platter with tea, fresh berries and flowers.

🌹 Why the Goat Cheese Works

Apple desserts can sometimes become overwhelmingly sweet.

Goat cheese fixes that.

Its gentle tang and creaminess balance:

It's elegant enough for brunch.

Easy enough for an afternoon snack.

Beautiful enough for a party.

And whimsical enough for the Fairy Pet Mother.

That makes it a keeper.
