Sometimes life gives you lemons.

Sometimes life smashes two windows out of your van.

And sometimes you look at four bags of marshmallows and decide that today, we’re making s’mores balls.

Welcome back to the Nomad Kitchen.

After a particularly rough week, I needed something cheerful, easy and completely unserious. I had several bags of miniature marshmallows from the food bank, a giant box of crispy rice cereal, a box of Scooby-Doo cereal, dark chocolate chips and graham crackers.

That sounded like a party to me.

So I melted butter and marshmallows together with flaky sea salt and vanilla, poured the whole molten, glorious mess over two kinds of cereal, added dark chocolate and crumbled graham crackers, and then tossed in even more marshmallows after everything had cooled slightly.

The result?

Crunchy. Gooey. Salty. Chocolatey. Marshmallowy. Ridiculous.

Exactly what I needed.

And because these little monsters can be made ahead and frozen, they’re perfect for Halloween parties, autumn gatherings, movie nights or those days when life has been behaving badly and you need a little edible joy.

Naturally.

SCOOBY S’MORES CRUNCH BALLS

Makes: A big batch — exact yield depends on how enormous you make them
Prep: About 20 minutes
Chill: 30–60 minutes
Difficulty: Ridiculously easy

Ingredients

  • 1 stick (½ cup) butter

  • 4 large bags miniature marshmallows

  • ½ teaspoon flaky sea salt

  • ¼ teaspoon pure vanilla extract

  • 1 large box crispy rice cereal

  • 1 box Scooby-Doo cinnamon cereal

  • 1 bag dark chocolate chips

  • About ½ package graham crackers, roughly crumbled

  • 2 additional bags miniature marshmallows

  • Additional butter for your hands

Make the Marshmallow Mixture

In a large pot over medium heat, melt the butter.

Add the four bags of miniature marshmallows and stir continuously until completely melted and glossy.

Stir in the flaky sea salt and vanilla.

You should now have a pot of dangerously delicious molten marshmallow.

Build the Crunch

Pour the crispy rice cereal and Scooby-Doo cereal into your largest mixing bowl and toss them together.

Crumble the graham crackers directly into the bowl. Don't pulverize them into crumbs — leave some wonderful irregular pieces and little chunks.

Add the dark chocolate chips.

Carefully pour the hot marshmallow mixture over everything.

Fold and toss until the cereal is thoroughly coated.

The heat will begin melting some of the dark chocolate, creating beautiful chocolate streaks throughout the marshmallow mixture.

That's exactly what we want.

Add the Extra Marshmallows

Let the mixture cool slightly.

Once it is still warm and sticky but no longer screaming hot, fold in the remaining two bags of miniature marshmallows.

These shouldn't completely melt. You want little pockets of whole marshmallow running throughout the finished treats.

Make the Balls

Butter your hands generously.

Grab portions of the mixture and gently press them together into balls.

Make little ones for bite-size Halloween treats, baseball-size ones for substantial snacks, or go full Tré Taylor and make yourself a glorious softball-size s'mores monster.

There are no cereal police.

Chill

Arrange the balls in a large freezer-safe bag or container in rows so they don't stick together.

Freeze until firm.

You can enjoy them chilled or allow them to soften for a few minutes before eating for a gooier, chewier texture.

Halloween Ideas

This recipe is begging to be played with.

Try orange, purple and green candy-coated chocolates for Halloween. Add peanut butter chips for a peanut-butter s'mores version. Mix in tiny pretzel pieces for extra salty crunch. Use chocolate crispy rice cereal for an even deeper chocolate version.

You could even make tiny balls, wrap them individually and pile them onto a Halloween party platter.

The important part is keeping that combination of crispy cereal + buttery marshmallow as your foundation. From there, go wild.

A Little Nomad Kitchen Note

I made these after a difficult few days.

Berkeley, CA September 2026

On my first night pet sitting in Berkeley, my van — which has also been my home for years — was vandalized while it was parked outside. Two windows were smashed. Friends stepped in, a GoFundMe was started, and enough help came through to get the broken glass repaired while I continued working on the rest.

There are moments when life asks you to solve very serious problems.

And then there are moments when the smartest thing you can do is melt some marshmallows.

Cooking has always been one of the ways I come back to myself. You take whatever you've got, put your hands to work, make something delicious and share it.

These aren't fancy.

They're not supposed to be.

They're crunchy little balls of chocolate-marshmallow happiness made in the middle of a hard week.

And sometimes that's enough.
