One of the things I love most about classic French pâte à choux pastry is that it becomes whatever you dream it to be.
Make them small for elegant cocktail parties.
Make them medium for afternoon tea.
Make them large enough for a picnic lunch in wine country.
The beauty of the humble profiterole is that it begins as a simple golden pastry shell and becomes a vessel for creativity.
After successfully baking my first batch of classic pâte à choux, I couldn't wait to explore another flavor combination inspired by my love of coffee, chocolate, and old-world French cafés.
This Café de Paris Mocha Profiterole combines rich coffee ice cream, silky chocolate ganache, and delicate French pastry into a dessert that feels both sophisticated and wonderfully comforting.
It reminds me of sitting at a tiny café table, watching the world go by while enjoying something simple and beautiful.
And perhaps that's what I love most about French cooking.
The ingredients don't have to be expensive.
The techniques don't have to be complicated.
They simply ask us to slow down and savor the moment.

For the pastry shells, begin with:
Bake until golden, airy, and hollow.
Allow to cool completely before filling.
☕ Ingredients
🥐 6 profiterole shells
🍦 Coffee ice cream
🍫 Warm chocolate ganache
🍫 Chocolate curls or shaved chocolate
✨ Cocoa powder for garnish
🍫 Simple Chocolate Ganache
1 cup chocolate chips
½ cup heavy cream
1️⃣ Heat cream until steaming.
2️⃣ Pour over chocolate chips.
3️⃣ Allow to sit for 2 minutes.
4️⃣ Stir until glossy and smooth.
☕ Assembly
1️⃣ Slice profiteroles in half.
2️⃣ Add a generous scoop of coffee ice cream.
3️⃣ Replace pastry tops.
4️⃣ Spoon warm chocolate ganache over each profiterole.
5️⃣ Finish with shaved chocolate.
6️⃣ Dust lightly with cocoa powder.
7️⃣ Serve immediately.
