I have always loved rich morning coffee, but afternoon tea is something entirely different. Tea asks us to pause. To breathe. To savor.
My version may be a little more Bohemian than British—a favorite handmade teapot, mismatched china, fresh flowers from the garden, music playing softly in the background, and friends gathered around a table with something beautiful to share.
Maybe it's a favorite book.
A poem.
A family story.
A song.
A flower from the garden.
Or simply a little laughter.
Because the best tea parties aren't really about the tea...
They're about the people gathered around the table.
Golden Fairy Kisses
One afternoon I cut a sheet of puff pastry into tiny little squares and slipped them into hot oil.
Within seconds they transformed into delicate golden clouds.
After a light dusting of powdered sugar and just the tiniest whisper of flaky sea salt, I took one bite and smiled.
They weren't doughnuts.
They weren't beignets.
They were something entirely their own.
Light.
Buttery.
Crispy.
Delicate.
Almost too rich to eat more than three or four.
Which, somehow, makes them even more special.
That's why I call them Golden Fairy Kisses.
Little bites of happiness.
Ingredients
Golden Fairy Kisses
1 sheet frozen puff pastry, thawed
Neutral frying oil (about 1½–2 inches deep)
½ cup powdered sugar
Small pinch flaky sea salt
Fairy Berry Compote
1 cup fresh strawberries, chopped
½ cup fresh blueberries
1 tablespoon strawberry jam
1–2 tablespoons sugar (to taste)
1 teaspoon fresh lemon juice (optional)
½ teaspoon vanilla extract
Tiny pinch flaky sea salt
Directions
Make the Golden Fairy Kisses
Heat the oil to about 350°F (175°C).
Cut the puff pastry into small squares, diamonds, or other whimsical shapes.
Carefully fry a few pieces at a time.
They puff beautifully and become golden in about 30–60 seconds per side.
Transfer to paper towels to drain.
While still warm, place them into a large bowl with the powdered sugar and a tiny pinch of flaky sea salt.
Gently toss until every little puff is beautifully coated.
Make the Fairy Berry Compote
Combine the strawberries, blueberries, strawberry jam, sugar, vanilla, lemon juice (if using), and flaky sea salt in a small saucepan.
Cook over medium heat for about 5–7 minutes, stirring occasionally.
Some berries should soften while others stay whole, creating a rustic, jewel-like compote.
Allow to cool slightly before serving.
✨ Warning: Golden Fairy Kisses have been known to disappear faster than common sense. YUM!
