Thick boneless pork chops are opened into generous pockets and packed with a rich filling of seasoned beef and sausage, jalapeños, cream cheese, nutty Gruyère and sharp cheddar. A blanket of thick-cut bacon goes over the opening before the chops are roasted upright, allowing all those savory juices and melting cheeses to stay tucked inside.
Cut one open at the table and you get the best part: that gorgeous cross-section of juicy pork surrounding a molten, spicy, ridiculously savory center.

🛒 Ingredients
Serves 6
6 thick-cut boneless pork chops
½ lb ground beef
½ lb pork or Italian sausage
4 oz cream cheese, softened
1–2 fresh jalapeños, seeded and finely diced
½ cup shredded sharp cheddar cheese
½ cup shredded Gruyère cheese
½ teaspoon onion powder
½ teaspoon dried Italian seasoning
Kosher salt
Freshly ground black pepper
6 slices thick-cut bacon
Optional for serving:
Fresh parsley or chopped green onions
Extra jalapeño slices
Dijon mustard
A simple green salad
🔪 1. Make the Pork Chop Pockets
Preheat the oven to 375°F.
Pat the pork chops dry.
Using a sharp knife, carefully cut a deep pocket into the side of each chop. Don't slice all the way through—you want a generous cavity with enough pork remaining around it to hold the filling.
Think pocket, not butterfly.

Brown the ground beef and sausage in a skillet until cooked through. Drain any excessive fat and allow the mixture to cool slightly.
