🌮 A Colorful One-Pan Supper from The Nomad Kitchen🍗
The Fairy Pet Mother has landed at a new East Bay Nomad Kitchen for the rest of the month, and naturally, one of the first orders of business was figuring out what delicious thing I could make with a gorgeous whole roasting chicken and an abundance of fresh vegetables.
I recently received a wonderful haul of fresh produce—including some of those slightly imperfect vegetables that don't always make the beauty pageant cut at the market.
And you know what?
Chefs love organic, possibly unusual-shaped vegetables. ❤️
A crooked pepper still tastes like a pepper. A funny-looking tomato becomes magnificent once it's roasted. And when beautiful food has been generously shared with me, I'm going to honor it by cooking the hell out of it.
I'm also trying to eat the rainbow, and this roasting pan certainly accomplished that.

What began as a simple roast chicken turned into something much more fun:
A Southwest Roasted Chicken Fiesta.
💃 WHAT MAKES THIS A FIESTA?
This isn't quite traditional roast chicken.
It isn't fajitas.
It isn't tacos.
And it certainly isn't stew.
It's a big, rustic whole roasted chicken nestled over Mexican-inspired vegetables, with lots of roasted garlic, fresh herbs and peppers.
As the chicken cooks, its juices drip into everything underneath. The tomato begins to break down, the onion softens, the peppers become sweet and smoky, and those little red potatoes absorb all that garlicky chicken goodness.
Then you put the whole glorious thing on the table with warm tortillas, avocado, salsa, sour cream, Mexican cheese and creamy chipotle sauce.
Everybody builds dinner however they please.
Now THAT is a fiesta. 🌮💃🔥
🛒 INGREDIENTS
🍗 For the Roasted Chicken
1 whole roasting chicken
Olive oil
Plenty of roasted garlic
Fresh cilantro, chopped
Fresh parsley, chopped
Salt
Freshly ground black pepper
Your favorite herb pesto or chimichurri-style herb mixture, optional
🌈 For the Mexican-Inspired Roasted Vegetables
2 large red potatoes, cut into small bite-size pieces
2–3 carrots, diced
3 stalks celery, diced
1 yellow onion, diced
1 large red bell pepper, diced
Fresh jalapeños, diced to taste
1 fresh tomato, chopped
Fresh or cooked corn kernels
Olive oil
Plenty of roasted garlic
Fresh cilantro
Fresh parsley
Salt
Freshly ground black pepper
🌶️ Optional Southwest Seasonings
Add any combination you love:
Ground cumin
Smoked paprika
Chili powder
Chipotle seasoning
Mexican oregano
Keep the seasoning relatively simple if your roasted-garlic herb mixture already packs plenty of flavor.
🔪 LET'S MAKE DINNER
🌈 1. Chop the Vegetables
Cut the potatoes, carrots, celery, onion, bell pepper, jalapeños and tomato into relatively small, bite-size pieces.
The smaller pieces are intentional.
As everything roasts beneath the chicken, some of the vegetables will remain intact while the tomato, onion, garlic and juices begin creating a rustic natural pan sauce.
🧄 2. Season Everything Generously
Place the vegetables in a large mixing bowl.
Drizzle generously with olive oil and add plenty of roasted garlic, fresh cilantro, parsley, salt and freshly ground pepper.
Add cumin, smoked paprika or chili powder if you'd like a stronger Southwest flavor.
Toss everything together until thoroughly coated.
Spread the vegetables across the bottom of a large roasting pan.
🍗 3. Prepare the Chicken
Pat the chicken dry.
Season the inside generously with salt and pepper.
Rub the outside with olive oil, roasted garlic, fresh herbs, salt and pepper.
Place the whole chicken directly on top of the vegetables.
That's the secret.
All those beautiful chicken juices are going somewhere—and we want them going straight into dinner.
🔥 4. ROAST
Conventional Oven
Roast at approximately 400°F until beautifully browned and cooked through.
Convection Oven
Use Convection Bake at approximately 350–375°F.
Convection ovens circulate hot air around the food and can brown chicken considerably faster than a traditional oven, so start checking earlier than you normally would.
If the skin becomes beautifully browned before the meat is finished cooking, loosely tent the chicken with foil.
🌡️ Check the Temperature
The thickest portion of the chicken should reach at least 165°F, measured without touching the bone.
Once cooked, remove the chicken from the roasting pan and allow it to rest for 10–15 minutes before carving.
🌽 5. ADD THE CORN
I like adding the corn toward the end rather than roasting it for the entire cooking time.
Fold cooked corn kernels into those hot roasted vegetables and pan juices.
The corn stays sweet and juicy and gives you another beautiful color and texture.
Now stir everything around.
Those little potatoes have absorbed chicken juices.
The tomato has softened into the sauce.
The peppers and onions have become sweet.
The roasted garlic is everywhere.
This is the moment you start stealing potatoes directly from the roasting pan.
Quality control. Obviously. 😂
🌮 BUILD THE SOUTHWEST FIESTA TABLE
Warm a stack of corn and flour tortillas and wrap them in a clean kitchen towel to keep them soft.
Then put everything on the table family-style.
