When I was growing up, zucchini seemed to appear overnight in the backyard garden. One day there would be tiny blossoms, and the next thing you knew, there were giant zucchini hiding under the leaves like little green submarines.

This recipe is one of those old-school summer dinners that never goes out of style. The zucchini turns tender and sweet while a savory mixture of Italian sausage, ground beef, basil pesto, Parmesan cheese, onions, and marinara bakes into something rich, hearty, cheesy, and deeply satisfying.

It is naturally low-carb, packed with protein, and full of beautiful summer vegetables. Add more cheese if your heart says yes. Mine always does.

🛒 Ingredients

  • 🥒 4 large zucchini

  • 🥩 1 pound ground beef

  • 🌭 1 pound mild Italian pork sausage

  • 🧅 1 medium onion, sautéed until soft

  • 🥚 2 large eggs

  • 🍞 2 slices day-old sourdough bread, pulsed into breadcrumbs
