Creamy Dijon Pork Tenderloin Medallions Recipe

Servings: 3–4

Prep time: 15 minutes

Cook time: Approximately 20 minutes

Total time: Approximately 35 minutes for the pork and sauce

Cooking method: Stovetop skillet

Ingredients

For the pork:

  • 1–1¼ pounds pork tenderloin, plain or garlic-and-herb marinated

  • 1 tablespoon olive oil

  • Freshly ground black pepper, to taste

  • ½ teaspoon dried thyme, optional for plain pork

For the Dijon cream sauce:

  • 1 tablespoon unsalted butter

  • 1 small shallot, finely chopped

  • 2 cloves fresh garlic, minced

  • ⅓ cup chicken broth, preferably low-sodium

  • ½ cup heavy cream

  • 1 tablespoon Dijon mustard

  • 1 teaspoon whole-grain mustard, optional

  • ½ teaspoon fresh thyme leaves, optional

  • A small squeeze of fresh lemon juice, optional

  • Salt and freshly ground pepper, to taste

Instructions

Step 1: Prepare the pork

Remove the pork tenderloin from its packaging. If it's already marinated, gently pat away excess liquid so the meat can develop a beautiful golden crust.

Slice crosswise into thick medallions, approximately 1–1¼ inches each.

If using plain pork, season lightly with thyme, salt, and pepper. If the pork is already marinated, hold off on adding extra salt until you've tasted the finished sauce.

Step 2: Sear until beautifully golden

Heat olive oil in a large skillet over medium-high heat.

Arrange the medallions in a single layer, leaving a little space between them.

Sear approximately 2–4 minutes per side, adjusting for thickness and heat, until the pork develops a gorgeous golden-brown crust.

Use a meat thermometer to check that the center reaches 145°F. Transfer the pork to a warm plate and let it rest for at least 3 minutes.

Step 3: Build your French country sauce

Reduce the skillet heat to medium-low.

Add the butter and chopped shallot. Sauté for 1–2 minutes until softened.

Stir in the minced garlic and cook for approximately 30 seconds, just until fragrant.

Pour in the chicken broth, gently scraping the bottom of the skillet to release those delicious browned bits.

That's where the flavor lives!

Step 4: Make the Dijon mustard cream gravy

Add the heavy cream, Dijon mustard, optional whole-grain mustard, and thyme.

Whisk gently and simmer over low heat for 2–4 minutes until the sauce begins to thicken.

Do not boil vigorously.

Taste and adjust the seasoning. Add a few drops of lemon juice if you'd like a slightly brighter flavor.

Step 5: Bring everything together

Arrange the rested pork medallions on a serving platter or individual plates.

Spoon the warm Dijon mustard cream sauce generously over the pork.

Garnish with fresh thyme or chopped parsley, if available.

Serve immediately with fluffy mashed potatoes and colorful roasted vegetables.

Roasted Garlic Mashed Potatoes

Nothing catches a beautiful cream sauce quite like homemade mashed potatoes.

Ingredients:

  • 1½ pounds potatoes, peeled and cubed

  • 1 small head of fresh garlic

  • 2–3 tablespoons butter

  • ¼–⅓ cup warm milk or cream

  • Olive oil

  • Salt and pepper, to taste

Directions:

  1. Preheat the oven to 400°F.

  2. Slice the top off the garlic head, drizzle lightly with olive oil, and wrap in foil.

  3. Roast for approximately 35–45 minutes until the cloves become soft, fragrant, and golden.

  4. Meanwhile, boil the potatoes in salted water until fork-tender, approximately 15–20 minutes.

  5. Drain thoroughly, then mash with butter, warm milk, and 2–4 roasted garlic cloves.

  6. Add more roasted garlic to taste, along with salt and pepper.

Nomad Kitchen tip: Roasting transforms sharp, raw garlic into something sweet, mellow, and almost buttery. It's a wonderful way to add luxurious flavor without buying expensive ingredients.

Simple Roasted Autumn Vegetables

Carrots, onions, green beans, and Brussels sprouts all make delicious companions for pork.

Toss your vegetables with olive oil, black pepper, and a little thyme.

Roast at 400°F until tender and beautifully caramelized. Carrots and onions cut into medium pieces generally take 25–35 minutes; add quicker-cooking vegetables later.

For a lovely finishing touch, drizzle roasted carrots with a tiny bit of honey.

No fuss. Just beautiful vegetables doing what they do best.

Tré's Nomad Kitchen Tips

Do you need to brine pork tenderloin?

Usually not! Pork tenderloin is naturally tender. If you're using a pre-marinated tenderloin, it may already contain salt and added moisture. Adding another brine could make it excessively salty.

Can you use milk instead of heavy cream?

Yes, although the sauce will be thinner. For a lighter gravy, whisk 1 teaspoon cornstarch into a little cold milk before adding it to the skillet and gently simmer until thickened.

Can you add mushrooms?

Absolutely! Sauté sliced mushrooms with the shallots before adding the broth. Mushrooms make this dish particularly rich and satisfying.

How do you keep the pork juicy?

The secret is simple: don't overcook it. Use a thermometer, cook to 145°F, and give the pork at least 3 minutes to rest.

Can you make it ahead?

You can prepare the mashed potatoes and vegetables ahead of time. For the best texture, cook the medallions just before serving. Refrigerate leftovers promptly in airtight containers and use within 3–4 days.
