Before these Napa Valley Mushroom & Gruyère French Onion Profiteroles could happen, Bleep insisted on a field trip to Berkeley Bowl in Berkeley, California. Here's where we discovered one of the most spectacular gourmet mushroom selections we've ever seen—and the beautiful mushrooms that inspired this recipe.

Some recipes feel like they belong at a dinner table.

Others belong at a celebration.

This one belongs at an art gallery opening in Napa Valley.

The inspiration began with a basket of beautiful mushrooms discovered during a visit to Berkeley. They were earthy, fragrant, and absolutely irresistible. Combined with slowly caramelized onions, roasted garlic, fresh herbs, and a splash of California wine, they created a filling that tasted remarkably like French onion soup.

There was only one problem.

French onion soup isn't exactly easy to carry around at a cocktail party.

So instead of serving it in a bowl, we tucked all those rich, savory flavors into delicate French profiteroles.

The result is a crisp, airy pastry filled with buttery mushrooms, sweet caramelized onions, roasted garlic, and wine-kissed herbs, then finished with melted Gruyère cheese and fresh chives.

Every bite feels elegant.

Every bite tastes like wine country.

Napa Valley Mushroom & Gruyère French Onion Profiteroles

Yield

12–16 profiteroles

Ingredients

For The Filling

🍄 8 ounces mushrooms, finely chopped

🧅 2 large sweet onions, thinly sliced

🧄 4 cloves roasted garlic

🧈 2 tablespoons butter

🍷 ¼ cup Napa Valley white wine

🌿 1 teaspoon fresh thyme

🧂 Salt and pepper to taste

🧀 1 cup grated Gruyère cheese

🌱 Fresh chives for garnish

For The Pastry

Perfect Classic Pâte à Choux Pastry - Prepared profiteroles (choux pastry shells)

Directions

Caramelize The Onions

  1. Melt butter in a large skillet over medium-low heat.

  2. Add onions.

  3. Cook slowly for 25–30 minutes until deeply golden and sweet.

Build The Filling

  1. Add mushrooms to the onions.

  2. Cook until moisture evaporates.

  3. Stir in roasted garlic and thyme.

  4. Pour in wine.

  5. Simmer until almost completely reduced.

  6. Season with salt and pepper.

Allow filling to cool slightly.

Fill The Profiteroles

  1. Slice each profiterole in half.

  2. Spoon mushroom filling inside.

  3. Top with Gruyère cheese.

  4. Place under broiler for 1–2 minutes until melted and bubbly.

Finish

Sprinkle with fresh chives.

Serve warm.
