Ingredients
1 French baguette
2 cups shredded slow-braised roast beef
1 small onion, diced
8 ounces mushrooms, sliced
4 cups fresh baby spinach
2 tablespoons butter
1 tablespoon olive oil
½ cup heavy cream
1 cup shredded Gruyère cheese
Salt and pepper to taste
Instructions
Heat butter and olive oil in a large skillet.
Sauté onions and mushrooms until golden and fragrant.
Add spinach and cook until wilted.
Stir in the heavy cream and simmer until slightly thickened.
Fold in the shredded roast beef and season with salt and pepper.
Slice the baguette lengthwise and hollow out some of the interior bread.
Fill generously with the beef and creamed spinach mixture.
Top with Gruyère cheese.
Bake at 400°F for 15–20 minutes until the cheese is melted and the bread is crisp.
Cool slightly before slicing.
