Silky, Comforting & Inspired by the Heart of Northern Italy

Long before mashed potatoes became a staple on American dinner tables, families throughout Northern Italy were gathering around steaming bowls of creamy polenta.

Made from stone-ground cornmeal and slowly cooked until smooth and velvety, polenta has been a beloved comfort food for centuries. In the countryside of Lombardy, Veneto, and Piedmont, it was often served alongside braised meats, rich stews, roasted vegetables, wild mushrooms, and hearty family meals. Humble, affordable, and deeply satisfying, polenta became known as one of Italy's great comfort foods.

What makes polenta so special is its versatility. It can be served soft and creamy like mashed potatoes, allowed to cool and sliced for grilling, or paired with everything from rustic stews to elegant wine-country dinners.

This Rustic Italian Cream Polenta is one of my favorite versions. A touch of butter, a splash of cream, and just enough Parmesan and Romano cheese create a silky texture without overwhelming the natural sweetness of the corn. The result is rich without being heavy, elegant without being complicated, and absolutely perfect for soaking up every last drop of a delicious sauce.

Whether you're serving Beef Bourguignon, short ribs, pot roast, roast chicken, or a hearty mushroom ragù, this beautiful side dish turns an ordinary dinner into something memorable.

Serves 6

Ingredients

  • 1 cup polenta (coarse cornmeal)

  • 4 cups chicken broth

  • 1 cup water

  • 2 tablespoons butter

  • ¼ cup heavy cream

  • ¼ cup freshly grated Parmesan cheese

  • 2 tablespoons freshly grated Romano cheese

  • 3 cloves roasted garlic, mashed into a paste

  • ½ teaspoon sea salt

  • ¼ teaspoon freshly ground black pepper

  • Fresh parsley for garnish

Instructions

  1. In a large saucepan, combine the chicken broth and water. Bring to a gentle boil.

  2. Slowly whisk in the polenta, stirring constantly to prevent lumps.

  3. Reduce heat to low and cook for 25 to 30 minutes, stirring frequently, until the polenta becomes smooth and creamy.

  4. Stir in the butter, roasted garlic, heavy cream, Parmesan cheese, and Romano cheese.

  5. Continue stirring until the cheese has melted completely and the polenta is silky and luxurious.

  6. Season with salt and black pepper to taste.

  7. Remove from heat and let rest for 2 to 3 minutes.

  8. Just before serving, whisk in one additional tablespoon of cold butter for an extra glossy, restaurant-quality finish.

  9. Spoon into a serving bowl and garnish with fresh parsley and a light sprinkle of Parmesan cheese.
