The Nomad Kitchen Signature Mac & Cheese

There are certain recipes that separate the amateurs from the serious cooks.

Macaroni and cheese is one of them.

Over the years I've shared barbecue pits, campfires, backyard cookouts, music festivals, and family gatherings with some truly talented pit masters. I've tasted macaroni and cheese made with expensive imported cheeses, macaroni and cheese made with five different cheese blends, and macaroni and cheese that looked beautiful but turned grainy, oily, or dry before dinner was even served.

I've also had some truly terrible macaroni and cheese.

The kind that comes from a box.

The kind that's dry around the edges.

The kind that's all cheese and no soul.

The best pit masters understand something important: great macaroni and cheese isn't about showing off. It's about creating the perfect balance of flavor, creaminess, texture, and comfort.

That's exactly what this recipe does.

Sharp cheddar delivers bold cheese flavor.

Gruyère brings a rich nutty depth and beautiful meltability.

Velveeta provides the silky, luxurious texture that keeps everything creamy, smooth, and reheatable.

And then there's the crown jewel.

Instead of ordinary breadcrumbs, cubes of fresh white bread are tossed with butter, Parmesan cheese, and parsley before being baked into a golden crunchy crust that provides the perfect contrast to the creamy cheese sauce underneath.

This is the macaroni and cheese that belongs next to barbecue ribs, brisket, pulled pork, fried chicken, holiday hams, and Sunday family dinners.

This is comfort food at its finest.

For the Parmesan Butter Croutons

  • 4 slices fresh white sandwich bread, cut into small cubes

  • 3 tablespoons melted butter

  • ¼ cup grated Parmesan cheese

  • 1 tablespoon chopped fresh parsley

👩‍🍳 Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil.

Cook the pasta until just shy of al dente, about 2 minutes less than package directions.

Drain and set aside.

Step 2: Build the Cheese Sauce

In a large Dutch oven or heavy saucepan:

🧈 Melt butter over medium heat.

Whisk in flour and cook for 1 minute.

Slowly add milk while whisking continuously.

Add:

  • Dry mustard powder

  • Cayenne pepper

  • Black pepper

Cook until slightly thickened.

Reduce heat to low.

Add the cheddar, Gruyère, Velveeta, and Parmesan.

Stir until completely smooth and silky.

Step 3: Combine

Fold the cooked pasta into the cheese sauce.

Stir gently until every noodle is coated in creamy goodness.

Transfer to a buttered baking dish.

Step 4: Make the Parmesan Butter Croutons

In a bowl combine:

🍞 Bread cubes

🧈 Melted butter

🧀 Parmesan cheese

🌿 Parsley

Toss until evenly coated.

Scatter over the macaroni and cheese.

Step 5: Bake

Bake at 350°F for 25–30 minutes.

The sauce should be bubbling around the edges and the croutons should be beautifully golden brown.

Allow to rest for 10 minutes before serving.

✨ Nomad Kitchen Secrets

🧀 Why Velveeta?

Let's settle this debate once and for all.

Velveeta isn't here for flavor.

It's here for texture.

It contains emulsifiers that help create a silky smooth cheese sauce that stays creamy and reheats beautifully.

Combined with sharp cheddar and Gruyère, it creates the perfect balance of flavor and texture.

🌶 Why Dry Mustard?

You don't taste mustard.

It simply makes the cheese taste more like cheese.

🍞 Why Croutons Instead of Breadcrumbs?

Because every great macaroni and cheese needs contrast.

The buttery Parmesan croutons create little crispy golden bites that elevate the entire dish from good to unforgettable.
