Over the years I've shared barbecue pits, campfires, backyard cookouts, music festivals, and family gatherings with some truly talented pit masters. I've tasted macaroni and cheese made with expensive imported cheeses, macaroni and cheese made with five different cheese blends, and macaroni and cheese that looked beautiful but turned grainy, oily, or dry before dinner was even served.
I've also had some truly terrible macaroni and cheese.
The kind that comes from a box.
The kind that's dry around the edges.

1 pound elbow macaroni or medium pasta shells
Salted water for boiling

¼ cup all-purpose flour
4 cups whole milk
1 teaspoon dry mustard powder
¼ teaspoon cayenne pepper
½ teaspoon black pepper
16 ounces sharp cheddar cheese, freshly shredded
8 ounces Gruyère cheese, freshly shredded
8 ounces Velveeta, cubed
2 tablespoons grated Parmesan cheese
For the Parmesan Butter Croutons
4 slices fresh white sandwich bread, cut into small cubes
3 tablespoons melted butter
¼ cup grated Parmesan cheese
1 tablespoon chopped fresh parsley

Step 1: Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the pasta until just shy of al dente, about 2 minutes less than package directions.
Drain and set aside.
Step 2: Build the Cheese Sauce
In a large Dutch oven or heavy saucepan:
