Recently, I spent a beautiful afternoon meeting people picking strawberries at a wonderful family farm in Brentwood, California. The rows were bursting with ripe berries, the sun was shining, and families were filling buckets while children darted between the plants searching for the biggest strawberries they could find.

The best part?

Taking those sun-ripened berries home and turning them into homemade strawberry ice cream.

No artificial flavors. No mystery ingredients. Just fresh strawberries, cream, vanilla, and a little patience.

🛒 Ingredients

🍓 2 cups fresh strawberries, diced

🍬 ½ cup sugar

🥛 1 cup whole milk

🥣 2 cups heavy cream

🌼 1 teaspoon pure vanilla extract

🧂 Pinch of salt

🍯 Optional: 2 tablespoons honey

This simple step is the secret.

When strawberries sit with sugar for about an hour, they release their natural juices through a process called maceration.

The sugar draws out the berry juices, creating a beautiful ruby-red syrup that intensifies the flavor and helps distribute the strawberry goodness throughout the ice cream.

A richer, sweeter, more intensely strawberry-flavored ice cream.

🍓 Step 1: Macerate the Strawberries

Place diced strawberries in a bowl.

Sprinkle with sugar.

Let sit for 30–60 minutes.

The strawberries will soften and create a gorgeous natural syrup.

Mash lightly with a fork, leaving some small berry pieces for texture.

🥣 Step 2: Make the Cream Base

In a large bowl combine:

🥛 Whole milk

🥣 Heavy cream

🌼 Vanilla extract

🧂 Pinch of salt

Whisk until smooth.

Fold the strawberries and all their delicious juices into the cream mixture.

Taste.

If your berries are slightly tart, add an extra tablespoon of sugar.

Ice Cream Maker Method

Pour mixture into your ice cream maker.

Churn according to manufacturer instructions.

Transfer to a freezer-safe container.

Freeze 2–4 hours until firm.

No Ice Cream Maker?

Pour mixture into a loaf pan.

Freeze.

Stir vigorously every 30 minutes for approximately 3 hours.

Continue freezing until scoopable.
