Important note: while the Big Kahuna gave his full approval as quality control manager, no dogs were harmed or fed chocolate in the making of this dessert—because chocolate is unsafe for dogs. This indulgent treat is strictly for humans, though it was crafted with plenty of love from a very proud“Fairy Pet Mother” and her four-legged supervisor.

There’s a certain kind of magic that only happens when you don’t have a plan.

Not a recipe.
Not a Pinterest board.
Just a handful of “what’s left” and a little bit of hunger whispering, Go on… try something.

And that’s exactly how these beauties were born—somewhere between a van full of leftover baking party cookie remnants and a quiet, music-filled home in San Francisco… while watching over one very soulful little dog.

🌊 The Scene

I’ve got some of the coolest friends in this city—true music family.
The kind of people with walls lined in vinyl history, where the turntable hums like a heartbeat and every record tells a story.

And their dog?
Let’s just say… if you’re a surf girl with a soft spot for sweet little characters, you’re done for.

He’s a tiny, beefy Chihuahua mix with a shy soul and a quiet kind of trust you earn one gentle visit at a time.

Between our little walks (in his very dignified carry-bag, of course), and moments of stillness, I found myself doing what I always do in a beautiful kitchen:

I cooked. I baked. I left a little love behind.

✨ The Happy Accident

Back in the van?
A stash of cookie ingredients that survived the last baking party, like stubborn little soldiers:

  • sugar, brown sugar

  • flour, cake flour

  • chocolate chips

  • peanut butter

  • oats

No master plan. Just instinct.

So I made cookies…
but not just any cookies.

These turned out soft and cakey inside, lightly crisp on the edges, with that perfect balance of:

chocolate + peanut butter + oat warmth

Not overly sweet. Just right.

And then… fate stepped in, a tub of chocolate fudge ice cream from Grocery Outlet.

So naturally… I made ice cream sandwiches.

🍪There are copycats… and then there’s paying proper respect.

Born in the fog-kissed streets of San Francisco in 1928, the legendary It’s-It Ice Cream Sandwich was dreamed up by George Whitney at Playland-at-the-Beach—two hearty oatmeal cookies hugging a slab of ice cream, often dipped in chocolate, built to survive both time and appetite. (Fun Fact: I remember Playland-at-the-beach. It closed when I was 10 years old-it was pretty run down by then.)

This little creation became a West Coast icon for a reason: that sturdy oatmeal cookie doesn’t crumble under pressure—it rises to the occasion.

This recipe is my love letter to that brilliance. I leaned into a peanut butter oatmeal chocolate chip cookie—soft, salty, and just structured enough to hold its own once frozen—wrapped around a rich, fudgy chocolate ice cream. And let me tell you… now I get it.

The oatmeal isn’t just nostalgia—it’s engineering. My version may not wear the crown, but it sure knows how to stand tall… preferably straight out of the freezer, and maybe made a little smaller so we can pretend we’re behaving.

📝 The Recipe

🍪 Everything-But-the-Kitchen-Sink Cookies

Ingredients:

  • 1/2 cup butter (softened)

  • 1/2 cup peanut butter

  • 1/2 cup sugar

  • 1/2 cup brown sugar

  • 1 egg

  • 1 tsp vanilla

  • 3/4 cup all-purpose flour

  • 1/2 cup cake flour

  • 1/2 tsp baking soda

  • pinch of salt

  • 1/2–3/4 cup oats

  • 1/2–3/4 cup chocolate chips

Directions:

  1. Preheat oven to 350°F.

  2. Cream butter, peanut butter, and sugars until smooth.

  3. Add egg and vanilla. Mix well.

  4. Stir in dry ingredients.

  5. Fold in oats and chocolate chips.

  6. Scoop onto baking sheet and bake 10–12 minutes.

  7. Let cool completely (this part matters for sandwiches!).

🍨 Ice Cream Sandwich Assembly

You’ll need:

  • Your baked cookies

  • Chocolate fudge ice cream (or any flavor you love)

Directions:

  1. Let ice cream soften slightly.

  2. Scoop onto one cookie.
