Crispy, creamy, smoky & completely plant-based

There is something about a perfectly ripe California avocado that already tastes like summer.

These crispy California Sunshine Avocado Rolls are stuffed with chunky avocado, sweet sun-dried tomatoes, red onion, fresh cilantro, toasted pepitas and just enough smoky chipotle to wake everything up. They're crunchy on the outside, creamy and bright inside, and completely vegan.

But the little bit of magic is what you dip them in.

Serve these beauties with my 🌞 California Tamarind Sunshine Sauce and you've got sweet, tart, smoky, spicy and creamy happening in one bite. Put a platter of these out at a summer party and watch how quickly the supposedly non-vegetarian people find their way over. 🌴

🥑 What You'll Need

  • 3 ripe but still firm California Haas Avocados

  • ⅓ cup oil-packed sun-dried tomatoes, drained and finely chopped

  • ¼ cup finely diced red onion

  • 2 tablespoons chopped fresh cilantro

  • 2 tablespoons toasted pepitas, roughly chopped

  • 1–2 teaspoons chipotle in adobo, finely minced, to taste

  • Juice of ½ fresh lime

  • ½ teaspoon ground cumin

  • Pinch of sea salt

  • Freshly cracked black pepper

  • 8 large vegan egg-roll wrappers

  • Avocado oil or neutral cooking spray

Optional Nomad Kitchen Twist 🌽

Add ¼ cup fire-roasted corn to the filling.

That little burst of charred sweetness is wonderful against the avocado, lime and smoky chipotle — and gives our California version its own personality.

🌞 Make the Filling

Cut the avocados into small chunks and place them in a mixing bowl.

Add the sun-dried tomatoes, red onion, cilantro, pepitas, chipotle, lime juice, cumin, salt and pepper.

Gently fold everything together.

Don't mash it. This isn't guacamole. You want beautiful pieces of avocado throughout every roll.

Fold in the fire-roasted corn if you're using it.

Taste.

Want more smoke? Add another touch of adobo. More brightness? Give it another squeeze of lime.

🌯 Roll 'Em Up

Place one vegan egg-roll wrapper on your work surface in a diamond shape.

Spoon approximately ⅓ cup filling just below the center.

Fold the bottom corner over the filling, fold in both sides and roll tightly toward the remaining corner.

Brush the final edge with a little water and seal.

Repeat with the remaining rolls.

🔥 Air Fryer Method

Lightly brush or spray the rolls with avocado oil.

Air fry at 375°F for 8–10 minutes, turning halfway through, until beautifully crisp and golden.

🔥 Oven Method

Heat oven to 425°F.

Place rolls seam-side down on a parchment-lined baking sheet and lightly brush or spray with avocado oil.

Bake approximately 15–18 minutes, turning once, until golden and crispy.

🔥 Traditional Fried Version

Heat about 1½ inches of neutral oil to 350°F.

Fry the rolls in small batches for approximately 2–3 minutes, turning as necessary, until deeply golden and crisp.

Drain on a rack or paper towels.

🌴 The Nomad Kitchen Way

Slice the hot rolls diagonally and pile them onto a platter with lime wedges, cilantro and a bowl of that gorgeous tamarind sauce right in the middle.

💚 Make It Your Own

More protein: Add rinsed black beans.

More heat: Add minced jalapeño.

More California: Add finely diced roasted poblano.

Nutty crunch: Pepitas keep these affordable and add wonderful texture.

No cilantro: Leave it out. The cilantro police have no jurisdiction in the Nomad Kitchen.
