Ingredients
2 cups Jasmine rice
3 cups chicken broth or water
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon sea salt
Zest of 1 lime
Juice of 2 limes
1 cup loosely packed fresh cilantro, finely chopped
Instructions
Rinse the Jasmine rice under cold water until the water runs mostly clear.
In a saucepan, combine the rice, broth, butter, olive oil, and salt.
Bring to a gentle boil.
Cover tightly and reduce heat to low.
Simmer for 15 minutes.
Remove from heat and let stand, covered, for 10 minutes.
Fluff gently with a fork.
Stir in the lime zest, lime juice, and fresh cilantro.
Taste and adjust seasoning if needed.
