Serves 4–6
Ingredients
2 pounds Brussels sprouts
3 tablespoons olive oil
3 cloves garlic, minced
½ cup freshly grated Parmesan cheese
1 tablespoon butter, melted
½ teaspoon sea salt
¼ teaspoon black pepper
Optional: pinch of red pepper flakes
Extra Parmesan for serving
Instructions
Preheat oven to 400°F.
Trim the ends of the Brussels sprouts and cut each one in half lengthwise.
In a large bowl, toss the Brussels sprouts with olive oil, garlic, Parmesan cheese, salt, and pepper until evenly coated.
Lightly coat a large baking sheet with the melted butter and a drizzle of olive oil.
Arrange the Brussels sprouts cut-side down in a single layer on the baking sheet.
Roast for 20 minutes.
Carefully toss the sprouts and continue roasting for an additional 10–15 minutes, until the edges are deeply golden brown and slightly crisp.
Sprinkle with additional Parmesan cheese immediately before serving.
