🧚 A Fairy Pet Mother Story

One of my favorite parts about pet sitting has very little to do with feeding animals...

It's feeding people.

Whenever I care for someone's home, I love leaving a little surprise waiting in the freezer or on the kitchen counter for the family to discover when they return home. Sometimes it's homemade soup. Sometimes fresh cookies. This weekend, it was colorful homemade ice cream sandwiches.

This visit was especially meaningful.

I've been caring for this wonderful Pacifica family and their pets for many years. Their children have grown taller, funnier, and more adventurous with every visit. Their home has become one of my favorite places to spend a quiet weekend.

But this time felt different.

Their two beloved senior dogs, who had become dear friends of mine over the years, have now crossed the Rainbow Bridge. Walking through the front door without sweet Maisel waiting to greet me tugged at my heart, and yes...

I cried a little.

But every ending makes room for a beautiful new beginning.

This weekend I met Freddy.

And oh my goodness...

Freddy may honestly be one of the sweetest rescue dogs I've ever had the pleasure of pet sitting.

He's only about a year old, endlessly curious, incredibly gentle, and absolutely convinced that every trip to the kitchen requires close professional supervision.

I couldn't have asked for a better sous-chef.

This weekend also marked another first in my pet-sitting adventures.

After years of caring for dogs, cats, chickens, guinea pigs, hamsters, snakes, parrots, tropical fish, saltwater aquariums, rabbits, and many wonderful senior pets with medications and special care...

I officially became Fairy Pet Mother to...

Three adorable little pet rats.

I have to admit...

I'd never pet sat rats before.

They mostly slept during the day, quietly plotting mysterious rat business while Freddy carefully monitored cookie production.

I can't honestly say they approved my baking...

...but they certainly kept an eye on everything.

🍪 Why These Cookies?

These colorful little sandwiches are built on the same sturdy cookie recipe from my Big Kahuna Crunchwich.

That cookie has become one of my favorites because it's strong enough to hold generous scoops of ice cream without falling apart, yet softens beautifully once frozen.

The oatmeal gives the cookie strength.

The peanut butter keeps it tender.

Mini chocolate chips add little pockets of happiness.

For this playful Fairy Pet Mother version, I simply made the cookies a little smaller, filled them with favorite ice cream flavors, and rolled the edges in rainbow sprinkles and miniature chocolate chips.

They're just the right size for little hands...

...and grown-ups who secretly want two.


🍦 Fairy Pet Mother Ice Cream Sandwiches

Makes

🍪 10–14 kid-sized sandwiches

or

🍪 6–8 grown-up sandwiches

🍪 Cookie Ingredients

  • 🧈 1 cup butter, softened

  • 🤍 ½ cup granulated sugar

  • 🍯 ½ cup packed brown sugar

  • 🥚 1 large egg

  • 🌼 1 teaspoon vanilla

  • 🌾 ¾ cup all-purpose flour

  • ☁️ ½ cup cake flour

  • 🥄 ½ teaspoon baking soda

  • 🧂 Pinch of salt

  • 🌾 ½–¾ cup rolled oats

  • 🍫 ½–¾ cup mini chocolate chips

🍨 Ice Cream Fillings

Choose one...

🍫 Chocolate

🍦 Vanilla

💗 Strawberry

🍪 Cookies & Cream

🍓 Your family's favorite flavor

🌈 Decorations

✨ Rainbow Sprinkles

🍫 Mini Chocolate Chips

🍬 Crushed Candy

🍪 Cookie Crumbs

👩‍🍳 Directions

① Preheat

Heat oven to 350°F.

Line baking sheets with parchment paper.

② Make the Cookie Dough

Cream together:

🧈 Butter

🤍 White sugar

🍯 Brown sugar

Beat until light and fluffy.

Mix in:

🥚 Egg

🌼 Vanilla

③ Combine Dry Ingredients

Mix together:

🌾 Flour

☁️ Cake flour

🥄 Baking soda

🧂 Salt

Gradually stir into the butter mixture.

Fold in:

🌾 Oats

🍫 Mini chocolate chips

④ Bake

Scoop into small cookie rounds.

Bake 10–12 minutes until edges are lightly golden.

Cool completely.

⑤ Assemble

Match similar-sized cookies.

Place a scoop of softened ice cream between two cookies.

Gently press together.

Roll the exposed ice cream edges in:

🌈 Sprinkles

🍫 Mini chocolate chips

—or both!

Freeze for at least 2 hours.

Wrap individually for easy freezer treats.

🧚 Make the kid-sized sandwiches genuinely kid-sized.

Small hands appreciate manageable desserts.

Adults...

...can simply have two.

Freeze the cookies for about 20 minutes before assembling.

They stay neater.

They freeze better.

They also disappear faster.

This weekend, those treats were made with one very handsome rescue dog named Freddy watching over the kitchen, three curious little rats standing by for quality control, and two wonderful children who I hope come home tired from their summer adventure and excited to discover a sweet surprise waiting just for them.

Freddy is one very lucky rescue dog.

But I have a feeling this beautiful family might be even luckier to have found him.
